Perfect for a weeknight dinner, this dish is ready in under 30 minutes and full of satisfying textures.
Ingredients:
- 1 lb Riverbend Cattle Company Ground Beef or 1 lb thinly sliced steak (flank, sirloin, or ribeye)
- 2 cups cooked white rice (jasmine or long-grain)
- 2 medium zucchinis, halved lengthwise and sliced into half-moons
- 2 green onions, thinly sliced
- 1 tbsp sesame seeds (for garnish)
For the Sauce:
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp honey or brown sugar
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1/2 tsp red pepper flakes (optional for spice)
Instructions:
- Make the Sauce: In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, garlic, ginger, and red pepper flakes. Set aside.
-
Cook the Beef or Steak: Heat a large skillet or wok over medium-high heat.
- If using ground beef: Add to the skillet and cook, breaking it apart with a spoon, until browned and cooked through (5–7 minutes). Drain excess fat if needed.
- If using sliced steak: Add to the skillet in a single layer, searing 1–2 minutes per side until just cooked through. Remove and set aside.
- Cook the Zucchini: In the same skillet, add zucchini slices and sauté for 3–4 minutes until just tender but still slightly crisp.
- Combine: Return the beef or steak to the skillet with the zucchini. Pour the sauce over the top and toss to coat. Cook for 1–2 minutes to heat through and blend flavors.
- Assemble the Bowls: Divide cooked white rice into four bowls. Top each with the beef and zucchini mixture. Garnish with green onions and sesame seeds.
This Asian Beef Bowl is endlessly customizable—add mushrooms, bell peppers, or a fried egg for extra flavor and protein. The ginger-sesame sauce pairs beautifully with Riverbend’s premium beef, making this an easy dinner you’ll come back to again and again.
