Fall Harvest Shoulder Steak Skillet (Apples, Sage & Caramelized Onions)

Celebrate cool-weather cooking with this cozy, one-pan Fall Harvest Shoulder Steak Skillet. Seared Riverbend Cattle Company Shoulder Steak is paired with sweet apples, caramelized onions, fresh sage, and a touch of cider for a richly flavored autumn dinner that’s weeknight-easy but special enough for guests.

Ingredients

For the Steak

  • 1 ½ to 2 lbs Riverbend Cattle Company Shoulder Steak, patted dry
  • 2 tbsp olive oil (divided)
  • 1 tbsp unsalted butter
  • 1 tsp kosher salt
  • ½ tsp freshly ground black pepper
  • ½ tsp garlic powder

For the Skillet

  • 1 large yellow onion, thinly sliced
  • 2 medium apples, sliced
  • 2 cloves garlic, minced
  • 1 tbsp fresh sage, chopped
  • ½ tsp thyme
  • ½ cup apple cider
  • ¼ cup beef broth
  • 1 tsp Dijon mustard

Instructions

  1. Season steak with salt, pepper, garlic powder.
  2. Sear in a hot skillet 3–4 minutes per side; set aside.
  3. Caramelize onions in oil & butter 8–10 minutes.
  4. Add apples, garlic, sage & thyme; cook 3 minutes.
  5. Deglaze with apple cider & broth; stir in Dijon.
  6. Return steak; cover and cook on low 5–10 minutes.
  7. Rest and slice against the grain before serving.
