Ingredients:

  • 1.5 lbs Riverbend Cattle Company sirloin tips, cut into 1–1.5 inch cubes
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped (plus extra for garnish)
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried)

Instructions:

  1. Prep the Beef: Pat the sirloin tips dry with paper towels. Season generously with salt and pepper.
  2. Sear the Sirloin Tips: Heat olive oil in a large skillet over medium-high heat. Once hot, add the sirloin tips in a single layer (work in batches if needed to avoid overcrowding). Sear for 2–3 minutes per side until browned but still slightly pink in the center. Remove from the skillet and set aside.

  4. Combine and Serve: Return the sirloin tips to the skillet, tossing to coat in the garlic butter. Cook for another 1–2 minutes until warmed through. Stir in parsley before serving.
