Homestyle Beef & Veggie Soup

Ingredients
- 1 lb Riverbend Cattle Company Ground Beef
- 1 tbsp olive oil or butter
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 cups chopped zucchini
- 1 cup chopped celery
- 1 cup green beans, trimmed and cut
- 1 can (14 oz) diced tomatoes
- 4 cups beef broth
- 1 tsp dried thyme
- 1 tsp salt, or to taste
- ½ tsp black pepper
Instructions
- In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks.
- Add chopped onion and garlic, cooking until fragrant.
- Stir in zucchini, celery, and green beans. Cook for 5 minutes to soften slightly.
- Add diced tomatoes, beef broth, thyme, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 25–30 minutes.
- Taste and adjust seasoning. Serve hot, topped with fresh herbs or a pat of butter for extra richness.
