Hollow zucchini halves and fill with leftover Riverbend Cattle Company ground beef (~3/4 cup) mixed with tomato sauce and spices. Top with mozzarella and bake until tender.

Ingredients:

  • 2 medium zucchinis, halved and hollowed
  • 3/4 cup Riverbend Cattle Company ground beef
  • 1/2 cup tomato sauce
  • 1/2 tsp oregano or Italian seasoning
  • 1/2 cup shredded mozzarella
