Ingredients:
- 1 lb Riverbend Cattle Company steak (sirloin, ribeye, or flank), seasoned with salt and pepper
- 1 cup dry orzo pasta
- 1/2 cup crumbled feta cheese
- 2 tbsp extra virgin olive oil, divided
- 1 tbsp fresh lemon juice
- 1 tsp dried oregano
- Salt and pepper, to taste
For the Cucumber-Tomato Salad:
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, finely sliced
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tsp dried oregano
- Salt and pepper, to taste
Instructions:
- Cook the Orzo: Bring a pot of salted water to a boil. Add the orzo and cook according to package directions until al dente. Drain and toss with 1 tbsp olive oil, lemon juice, oregano, and a pinch of salt and pepper.
- Prepare the Salad: In a bowl, combine cherry tomatoes, cucumber, and red onion. Drizzle with olive oil and red wine vinegar, then sprinkle with oregano. Toss gently and season with salt and pepper to taste.
- Cook the Steak: Heat a grill or skillet over medium-high heat. Sear steak for 3–5 minutes per side, depending on thickness, until it reaches desired doneness (130°F for medium-rare). Let rest for 5 minutes before slicing thinly against the grain.
- Assemble the Bowls: Divide the orzo between four bowls. Arrange slices of steak on top, add a generous scoop of cucumber-tomato salad, and sprinkle with crumbled feta. Drizzle with extra olive oil if desired.
This Greek Orzo Bowl is an ideal way to enjoy steak with fresh, seasonal ingredients. The orzo provides a comforting base, the cucumber-tomato salad adds crisp brightness, and the feta offers a tangy, creamy contrast. It’s a wholesome, colorful dinner that’s equally beautiful to serve and satisfying to eat.
