Osso Buco with Simple Herb Pan Sauce

Osso buco is a traditional, slow-cooked dish that turns humble ingredients into something truly special. Made with Riverbend Cattle Company beef shanks, this recipe celebrates the richness of the cut and the nourishing collagen found at its center.

This dish is about simplicity and patience. The beef shanks slowly soften as they braise, creating a tender, flavorful meal that feels comforting and grounding.

Ingredients

  • 4 Riverbend Cattle Company beef shanks
  • 2 tablespoons olive oil
  • 1 cup beef bone broth
  • 3 cloves garlic, smashed
  • 1 bay leaf
  • Fresh thyme
  • Salt and black pepper

Instructions

  1. Preheat oven to 325°F. Season beef shanks well with salt and pepper.
  2. Heat olive oil in a Dutch oven and sear shanks on both sides until golden brown.
  3. Add garlic, bay leaf, thyme, and bone broth to the pot.
  4. Cover and braise in the oven for 2½ to 3 hours, turning once halfway through.
  5. The meat should be tender, with a rich pan sauce forming in the bottom of the pot.

Serving Notes

Spoon the herb pan sauce over each shank before serving. The marrow can be enjoyed straight from the bone or stirred into the sauce for extra richness.
