Ingredients
For the Marinade:
- 1 ½ lbs Riverbend Cattle Company Skirt Steak, trimmed
- 1/3 cup olive oil
- Juice of 2 limes
- 3 cloves garlic, minced
- 1 tbsp soy sauce
- 1 tbsp Worcestershire sauce
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp chili powder
- ½ tsp crushed red pepper flakes (optional)
- Salt and freshly ground black pepper, to taste
For the Fajitas:
- 2 tbsp olive oil
- 1 large red bell pepper, sliced into strips
- 1 large yellow bell pepper, sliced into strips
- 1 large green bell pepper, sliced into strips
- 1 large onion, sliced into strips
- Warm flour or corn tortillas
- Optional toppings: sour cream, guacamole, shredded cheese, salsa, chopped cilantro, lime wedges
Instructions
1. Marinate the Skirt Steak:
- In a large resealable bag or shallow dish, combine olive oil, lime juice, garlic, soy sauce, Worcestershire sauce, cumin, paprika, chili powder, red pepper flakes, salt, and pepper. Mix well.
- Add the Riverbend Cattle Company Skirt Steak to the marinade, ensuring it’s fully coated. Cover and refrigerate for at least 1 hour, preferably 4–6 hours.
2. Prepare the Vegetables:
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
- Add the sliced bell peppers and onion. Cook, stirring frequently, until tender and slightly charred (about 5–7 minutes). Transfer to a plate and set aside.
3. Cook the Skirt Steak:
- Remove the marinated steak from the refrigerator and let it come to room temperature for 20–30 minutes.
