Spread shredded leftover Riverbend Cattle Co. ground beef (~1/2 cup), pepper jack cheese, black beans, corn, and diced jalapeño (optional) on a tortilla. Fold and crisp in a hot skillet until golden. Serve with pico, sour cream, or guacamole.

Ingredients:

  • 1/2 cup leftover Riverbend Cattle Co. ground beef
  • 1 large flour tortilla
  • 1/2 cup pepper jack cheese, shredded
  • 1/4 cup black beans, drained

  • 1 tbsp diced jalapeño (optional)
