Hanger steak is a flavorful, tender cut of beef prized for its rich, beefy taste and fine texture. It comes from the plate section of the steer, near the diaphragm, where it literally “hangs” between the rib and the loin — hence the name “hanger.” Because only one hanger steak is produced per animal, it’s sometimes called the “butcher’s steak,” as butchers often kept it for themselves rather than selling it.

The meat has a loose grain and visible marbling, giving it a juicy, succulent quality when cooked properly. Best served medium-rare to medium, hanger steak benefits from quick, high-heat cooking methods such as grilling, pan-searing, or broiling. It’s often marinated beforehand to enhance tenderness and deepen its savory flavor.
