Sirloin Steak with Buttered Noodles & Roasted Vegetables

This is a lighter take on a classic comfort pairing: steak and noodles. Instead of heavy sauces or elaborate preparation, Riverbend Cattle Company sirloin steak is simply cooked and served alongside buttered noodles and roasted vegetables.

The result is a meal that feels familiar and satisfying without feeling heavy. Each element plays a role, with the beef remaining the centerpiece.

Ingredients

  • 1½–2 lbs Riverbend Cattle Company sirloin steak
  • 8 oz egg noodles or similar pasta
  • 2 tablespoons butter
  • 2 cups roasted vegetables (broccoli, carrots, or squash)
  • Olive oil
  • Salt and black pepper

Instructions

  1. Season sirloin with salt and pepper.
  2. Heat a skillet over medium-high heat and sear steak until cooked to preference.
  3. Remove steak and let rest before slicing.
  4. Cook pasta according to package directions. Drain and toss with butter.
  5. Roast vegetables at 400°F until tender and lightly caramelized.
  6. Serve sliced steak alongside noodles and vegetables.
